Elderberry syrup is really easy to make, and a great support to the immune system.
Start out with as much fresh or dried berries as you would like. I used two cups dried.
Cover with water, and simmer for about 40 minutes or so, until the berries are soft and the water looks dark with juice.
Strain, mushing the berries to get as much juice out as you can. You can save the berries for other uses, or just make the chickens outside very, very happy.
Add enough raw honey (which has its own medicinal properties, too) to taste, and that’s it! Elderberry syrup is really tart, so be prepared to use quite a bit of honey if you want to give it to your kids straight. Keep in the fridge. A spoonful a day helps keep the bugs away 🙂
