Update: Today (Wednesday), we had leftover cabbage slaw (made w/cilantro and homemade mayo), tossed with leftover chicken (our own!) and mozzarella cheese, topped with crunched saltine crackers and onion bits. It was delish!
It is really difficult for me to craft a new lunch every day because, face it, lunch is in the middle of homeschooling, chores, telephone calls and toddler hijinks. But, we do need to eat! Here are some ideas of what we like to have for our midweek lunches:
- “Snacky lunch”…finger foods such as rolled sandwich meat and cheese sticks, vegetable and fruit slices, glasses of milk. Basically, what’s in the fridge that we can just pull out and serve?
- Leftovers…from the last night! I freshen it up a bit with fresh fruit.
- Soups…this is an easy thing to start in the morning and let it simmer all that time until it’s ready for lunch. And on a cool day, it sure smells up the house nicely!
- Chicken or tuna or egg salads with a single slice of bread or with crackers. This is something easy to double so that it’s ready for at least a couple of days. We like it topped with cheese and put under the broiler for a few minutes.
- Quesadillas with tortillas, cheese, and chopped vegetables (such as celery, carrots, onions, and something green on hand–like kale or broccoli pieces).
What you won’t find too often here is full sandwiches with two slices of bread. Sometimes we’ll have almond butter and honey sandwiches but it’s considered a “treat”. Mostly I try to sneak in as many vegetables as I can into everything I make, and serve up plenty of protein and good brain-growing fats. Lunch is usually when I serve up the cod liver oil, too. For drink, we usually have either water, raw goat or cow milk, or kombucha. Juice is hardly ever served around here because it is so concentrated in sugar.
